Ingredients

Sandwich Base

  • 2 slices rustic Italian bread sourdough or Texas toast work well too
  • 2 tbsp butter softened

Fillings

  • 1/4 cup marinara sauce homemade or jarred
  • 1/3 cup mozzarella cheese shredded
  • 1/4 cup provolone cheese shredded
  • 8-10 slices pepperoni turkey pepperoni is a lighter option
  • 1 tbsp Parmesan cheese grated
  • 1/2 tsp Italian seasoning
  • 1 pinch red pepper flakes optional

Instructions

  • Butter one side of each bread slice with softened butter, ensuring even coverage all the way to the edges.
  • Place one slice of bread, butter-side down, in a cold skillet or griddle. Spread the marinara sauce evenly across the bread, leaving a small margin around the edges.
  • Sprinkle half of the mozzarella and provolone cheeses over the marinara sauce.
  • Arrange the pepperoni slices evenly over the cheese layer.
  • Add the remaining cheese on top of the pepperoni, then sprinkle with Parmesan cheese and Italian seasoning.
  • Place the second slice of bread on top, butter-side up. Start cooking over medium-low heat.
  • After about 3-4 minutes, when the bottom is golden brown, carefully flip the sandwich using a spatula. Press down gently to ensure even cooking.
  • Cook for another 2-3 minutes until both sides are crispy and the cheese is completely melted.

Notes

For best results, grate your own cheese rather than using pre-shredded varieties which contain anti-caking agents that prevent proper melting. To avoid a soggy sandwich, don't use too much marinara sauce. For a healthier version, try whole grain bread and part-skim cheeses.
