Instructions
Preheat the oven to 425 degrees Fahrenheit and set the oven rack to the middle position.
Toss the carrots and shallots with melted butter, thyme, lemon juice, salt, pepper, and olive oil in a mixing bowl.
Spread the mixture evenly on a foil or parchment-lined baking sheet.
Cover with foil and roast for 15 minutes to steam and soften the carrots.
Remove the foil and continue roasting for another 30-35 minutes, stirring twice, until the carrots are tender and caramelized.
Serve hot alongside your main dish.
Notes
Feel free to substitute thyme with rosemary or add a sprinkle of parmesan for a cheesy twist.
