Ingredients

  • 1 lb Carrots medium-sized, peeled and cut into even sizes
  • 2 tbsp Butter melted
  • 4 Shallots two diced, two halved
  • 1 tbsp Fresh Thyme
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 425 degrees Fahrenheit and set the oven rack to the middle position.
  • Toss the carrots and shallots with melted butter, thyme, lemon juice, salt, pepper, and olive oil in a mixing bowl.
  • Spread the mixture evenly on a foil or parchment-lined baking sheet.
  • Cover with foil and roast for 15 minutes to steam and soften the carrots.
  • Remove the foil and continue roasting for another 30-35 minutes, stirring twice, until the carrots are tender and caramelized.
  • Serve hot alongside your main dish.

Notes

Feel free to substitute thyme with rosemary or add a sprinkle of parmesan for a cheesy twist.
