Ingredients

Mushrooms and Seasoning

  • 10 large open cap mushrooms
  • 2 tbsp vegetable or corn oil
  • 2 tbsp unsalted butter replace with vegan butter for a vegan version
  • 3 cloves garlic finely chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp lemon juice
  • 1/4 cup bread crumbs use gluten-free if necessary
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Level the stems of the mushrooms to allow them to sit flat.
  • Quickly fry the mushrooms, cap-side down, in hot oil for about 20 seconds.
  • Place mushrooms in a roasting pan with the stems up.
  • Combine the unsalted butter, chopped garlic, thyme, lemon juice, and salt and pepper in a bowl.
  • Spoon the garlic butter mixture onto each mushroom cap.
  • Gently press breadcrumbs onto each mushroom, covering the garlic butter layer.
  • Bake for 10 minutes, or until the breadcrumbs are golden and the mushrooms are tender.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 3 days. Reheat in oven for best results. Freezing not recommended.
