Mushrooms and Seasoning

large
open cap mushrooms
2
tbsp
vegetable or corn oil
2
tbsp
unsalted butter
replace with vegan butter for a vegan version
3
cloves
garlic
finely chopped
1
tbsp
fresh thyme
chopped
1
tbsp
lemon juice
1/4
cup
bread crumbs
use gluten-free if necessary
salt and pepper
to taste
Instructions
Preheat your oven to 400°F (200°C).
Level the stems of the mushrooms to allow them to sit flat.
Quickly fry the mushrooms, cap-side down, in hot oil for about 20 seconds.
Place mushrooms in a roasting pan with the stems up.
Combine the unsalted butter, chopped garlic, thyme, lemon juice, and salt and pepper in a bowl.
Spoon the garlic butter mixture onto each mushroom cap.
Gently press breadcrumbs onto each mushroom, covering the garlic butter layer.
Bake for 10 minutes, or until the breadcrumbs are golden and the mushrooms are tender.
Notes
Best enjoyed fresh but can be stored in the fridge for up to 3 days. Reheat in oven for best results. Freezing not recommended.
