Ingredients

  • 1 head large cabbage
  • 1 large onion
  • 12 oz bacon chopped
  • 1/4 cup vegetable oil
  • 1/4 cup distilled vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  • Cut the cabbage into chunks and slice the onion into rings.
  • In a Dutch oven, fry the chopped bacon until crisp. Remove the bacon and set it aside, saving the grease in the pot.
  • Add vegetable oil to the bacon grease in the pot. Toss in the cabbage and onions. Cook, stirring occasionally, until the cabbage turns clear and develops golden brown spots, around 1 hour.
  • Once the cabbage is cooked to perfection, stir in the distilled vinegar and mix well. Season with salt and pepper. Add the cooked bacon back to the pot and allow it to cook for another 10 minutes.

Notes

Store any leftover fried cabbage in an airtight container in the refrigerator for up to 3 days. Reheat in a pan on the stove until warmed through.
