Ingredients

  • 4 pounds potatoes baked and mashed
  • 1 1/2 cups shallots minced
  • 3 cups white cheddar shredded, divided
  • 3 cups sour cream
  • 1 tbsp salt
  • 1/4 tsp white pepper ground

Instructions

  • Preheat the oven to 350°F. Combine potatoes, shallots, most of the cheese, salt, and pepper in a bowl.
  • Fold in the sour cream gradually, stirring well after each addition.
  • Transfer the potato mixture to a well-oiled baking dish, sprinkle the remaining cheese on top, and bake for 25 minutes until golden brown.

Notes

For leftovers, store these mashed potatoes in an airtight container in the refrigerator. To reheat, place them in a covered dish in the oven or microwave until warmed through. They also freeze well for longer storage.
