Ingredients

Main Ingredients

  • 4 ripe peaches diced (about 3 cups)
  • 1/2 red onion finely diced (about 1/2 cup)
  • 1-2 jalapeños seeded and minced
  • 1 red bell pepper diced
  • 1/4 cup fresh cilantro chopped

Dressing

  • 2 tablespoons fresh lime juice about 1 large lime
  • 1 tablespoon honey or agave nectar optional
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cumin

Optional Additions

  • 1 ripe avocado diced

Instructions

  • Select peaches at the peak of ripeness. Blanch peaches in boiling water for 30 seconds, then transfer to an ice bath. Remove the skins and dice the peaches into 1/4-inch cubes.
  • Combine diced peaches with finely diced red onion, minced jalapeños, and diced bell pepper in a medium bowl.
  • Gently fold in the chopped cilantro, lime juice, honey, salt, and cumin.
  • Allow your spicy peach salsa to rest for at least 30 minutes in the refrigerator for flavors to meld together. If using avocado, add it just before serving.
  • Taste and adjust seasonings if necessary before serving.

Notes

For a milder salsa, remove all jalapeño seeds and membranes. For medium heat, keep some seeds. For fiery salsa, add a serrano pepper or 1/4 teaspoon of cayenne powder.
Store in an airtight glass container in the refrigerator for up to 3 days. This salsa is not suitable for freezing or canning without modifications.
Fresh mint, basil, or flat-leaf parsley are excellent alternatives to cilantro if preferred.
