Ingredients

For the salad

  • 6 cups fresh spinach washed and dried
  • 2 cups fresh strawberries hulled and sliced
  • 2 ripe avocados diced
  • 1/4 cup red onion thinly sliced
  • 1/3 cup candied pecans or walnuts
  • 1/4 cup crumbled feta cheese substitute with goat cheese or skip for vegan option

For the balsamic dressing

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey use maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic minced
  • salt and freshly ground black pepper to taste

Instructions

  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, and minced garlic until well combined. Season with salt and pepper to taste.
  • Place the washed and thoroughly dried spinach in a large salad bowl. For more tender leaves, you can gently massage the spinach with clean hands.
  • Add the sliced strawberries, diced avocados, and thinly sliced red onion to the spinach. Distribute them evenly throughout the salad.
  • Sprinkle the candied pecans or walnuts and crumbled feta cheese over the top of the salad.
  • Just before serving, drizzle the balsamic dressing over the salad and toss gently to coat all ingredients. Serve immediately.

Notes

For best results, serve this salad immediately after preparation. If you need to prepare components in advance, store the dressing separately and add the avocado just before serving. A squeeze of lemon juice on the avocado can help prevent browning if prepared in advance.
Feel free to customize this salad with additional proteins like grilled chicken or salmon to make it a complete meal.
