Ingredients

Bell Peppers

  • 3 large bell peppers

Ground Turkey Mix

  • 1/2 lb ground turkey lean
  • 1 16 oz can black beans rinsed and drained
  • 2-3 cups rice
  • 4 oz jalapeno cream cheese
  • 1 cup barbecue sauce sweet and spicy

Instructions

  • Cut the bell peppers in half, remove seeds and membranes.
  • Prepare the rice according to package instructions.
  • Cook ground turkey with seasonings until browned.
  • Combine cooked turkey with beans, sauce, and cream cheese in a bowl.
  • Stuff each pepper half with the mixture, top with cheese, then bake until peppers are tender.

Notes
