Ingredients

  • 1 lb ground beef
  • 1 cup uncooked elbow macaroni
  • 1 onion
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 1 can tomato sauce
  • 1 can diced green chilis
  • 1 tsp cumin
  • salt
  • black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • Cook the macaroni according to package instructions, then rinse and drain.
  • Cook the ground beef and onion in a skillet until browned and onions are soft. Drain excess grease.
  • Stir in diced tomatoes, frozen corn, tomato sauce, green chilis, salt, pepper, and cumin. Mix well.
  • Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  • Stir in the cooked macaroni and cilantro, then serve hot.

Notes
