Ingredients

  • pounds lean ground beef
  • 1 packet taco seasoning 1 oz
  • cup water
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can diced tomatoes with green chilies 10 oz, drained
  • 2 cups shredded Mexican cheese blend divided
  • 1 large bag Doritos or Fritos 9.25 oz, lightly crushed
  • 2 cups shredded lettuce
  • 1 cup diced fresh tomatoes
  • ½ cup sliced black olives
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño sliced, optional

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray.
  • In a large skillet over medium-high heat, brown the ground beef until no pink remains (approximately 5-7 minutes). Break the meat into small, even crumbles as it cooks.
  • Drain any excess fat from the skillet. Add the taco seasoning and water, stirring to combine. Simmer for 3-4 minutes until the mixture thickens slightly.
  • Stir in the drained black beans and diced tomatoes with green chilies. Continue to simmer for 2 minutes to allow the flavors to meld.
  • Spread half of the crushed chips in the bottom of the prepared baking dish. Top with the meat mixture, then sprinkle with 1½ cups of the shredded cheese.
  • Sprinkle the remaining chips over the cheese layer, then top with the remaining ½ cup of cheese. Bake uncovered for 15-20 minutes, until the cheese is fully melted and bubbly around the edges.
  • Remove from oven and let stand for 5 minutes. Top with shredded lettuce, diced tomatoes, black olives, dollops of sour cream, and a sprinkle of fresh cilantro. Add jalapeño slices if desired.

Notes

For a healthier version, try using ground turkey instead of beef, baked tortilla chips instead of fried ones, and Greek yogurt in place of sour cream. You can prepare the meat mixture up to 2 days ahead and store refrigerated for quick assembly later.
