Ingredients

  • 4 cups fresh watermelon cubes about ¼ of a medium watermelon
  • 1 medium cucumber peeled and roughly chopped
  • 20 fresh mint leaves plus extra for garnish
  • 2 limes juiced (approximately ¼ cup)
  • 2 tbsp honey or agave syrup adjust to taste

For Serving

  • 2 cups sparkling water or club soda
  • ice cubes
  • watermelon wedges and cucumber slices for garnish

Instructions

  • Remove seeds from watermelon cubes if necessary (though seedless varieties work best).
  • Place the watermelon chunks, cucumber, mint leaves, lime juice, and sweetener in a blender. Pulse until smooth but not completely liquefied—about 30-45 seconds.
  • Pour the blended mixture through a fine-mesh strainer into a pitcher, pressing gently with a spoon to extract all the liquid while leaving solids behind.
  • Refrigerate the strained mixture for at least 30 minutes if time permits.
  • When ready to serve, fill glasses halfway with ice, pour in the chilled watermelon-cucumber mixture until about ¾ full, and top with sparkling water. Stir gently to combine.
  • Garnish with fresh mint sprigs, watermelon wedges, or cucumber slices.

Notes

The watermelon-cucumber base can be prepared up to 24 hours in advance and stored in the refrigerator.
Natural separation will occur—simply stir before using.
Do not add sparkling water until serving time.
For a make-ahead option, freeze the base in ice cube trays and add to sparkling water as needed.
