Ingredients:
2 tbsp olive oil
1 c chicken stock
3 large boneless and skinless chicken breasts sliced into thin cutlets
6 tbsp all-purpose flour
½ tsp salt
¼ tsp ground black pepper
2 tbsp butter
3 cloves garlic minced
1 c heavy cream (double cream in the UK)
1 tsp chilli flakes
1 tbsp fresh basil leaves
¼ tsp thyme
⅓ c sundried tomatoes chopped
¼ tsp oregano
Directions:
1. Rub each chicken with salt and pepper. Coat each with flour as well.
2. Place a large skillet on the stove and turn the heat to medium.
3. Add olive oil and butter, then allow them to become hot.
4. Add the coated chicken pieces in batches. Cook per side for about 5 minutes or until they turn golden brown. Remove from the skillet onto a clean plate. Repeat the process with the rest of the chicken.
5. In the same empty skillet, add garlic and sauté until aromatic.
6. Add the chicken stock, then scrape the bottom of the skillet to get the brown bits.
7. Turn the heat down to medium-low, then add the Parmesan cheese and heavy cream. Stir until well blended. Let it simmer for several minutes.
8. Add the oregano, thyme, and chilli flakes. Stir until well mixed.
9. Sprinkle salt and pepper to season, then add the sundried tomatoes as well.
10. Put the chicken pieces back to the skillet and toss until well coated by the sauce.
11. Remove from the heat, then sprinkle freshly chopped basil on top.
12. Serve and enjoy!
Notes:
This is best served over rice or pasta. Don’t forget to spoon the delicious sauce on top.
