Ingredients

  • 1 Onion (diced)
  • 6 Boneless skinless chicken thighs
  • 1 can Cream of chicken soup
  • 1 can Cream of celery soup
  • 2 tbsp. Fresh parsley (chopped)
  • 1 tsp. Poultry seasoning
  • 2 c. Chicken broth
  • 1 can Buttermilk refrigerated biscuits
  • 2 c. Frozen mixed vegetables (defrosted)
  • Black pepper to taste

Instructions

  • Layer the chopped onion at the bottom of the crockpot.
  • Arrange the chicken thighs on top of the onion.
  • In a mixing bowl, combine cream of chicken soup, cream of celery soup, parsley, poultry seasoning, and black pepper. Pour the mixture over the chicken.
  • Pour chicken broth over the chicken mixture in the crockpot.
  • Cook on high for 5 hours without opening the lid.
  • After 4 hours, add the defrosted mixed vegetables and gently mix them in.
  • Flatten and slice the refrigerated biscuits. Layer the biscuit slices over the chicken mixture.
  • Let the biscuits cook for the remaining hour uncovered.
  • Once cooked, stir the mixture to incorporate the dumplings. Serve hot, garnished with freshly chopped parsley.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. Variations and substitutions include using boneless chicken breasts, different frozen vegetables, herbs, and seasonings. Serve with mashed potatoes, steamed broccoli, cornbread, or a green salad for a complete meal.
