Ingredients

  • 3 Tbsp Olive oil (Divided)
  • 4 pieces Boneless pork chops
  • 1 tsp Worcestershire sauce
  • 1/4 tsp Cayenne pepper
  • 3 tsp Garlic (Minced)
  • 1/2 tsp Cumin
  • Salt and pepper to taste
  • 2 lbs Multi-Colored potatoes cut into halves
  • 1 Red onion cut into large chunks
  • 1/2 tsp Paprika
  • 1/2 tsp Rosemary

Instructions

  • Preheat the oven to 400 degrees.
  • In a mixing bowl, combine 1 tbsp of olive oil, Worcestershire sauce, cayenne pepper, cumin, garlic, salt, and pepper. Coat the pork chops with this mixture and place them on a parchment-lined baking sheet.
  • In a separate bowl, mix the multi-colored potatoes, red onion, remaining olive oil, rosemary, paprika, salt, and pepper. Spread this mixture on the baking sheet next to the pork chops.
  • Bake the pork chops and vegetables for 20-25 minutes or until the potatoes are tender and the meat is fully cooked.
