Ingredients:
4 tbsp unsalted butter, divided
2 large cloves garlic, minced
2 large boneless and skinless chicken breasts, halved horizontally to make 4
1 tsp Italian seasoning
1/2 c fresh Parmesan, finely grated
2 large cloves garlic, grated
1 head cauliflower, riced
1 tsp paprika
Juice of one lemon (+ zest, if you like)
2 tbsp vegetable stock
1/2 c white onion, chopped
1/4 c fresh parsley, chopped
Salt and fresh cracked black pepper
Red chilli pepper flakes, optional
Directions:
For the Chicken:
1. Add the grated garlic, Parmesan cheese, Italian seasoning, and paprika into a mixing bowl. Stir until well mixed.
2. Rub each chicken breast with salt and pepper.
3. Coat each chicken breast with the Parmesan mixture.
4. Place a large non-stick skillet on the stove and turn the heat to medium-high.
5. Add 2 tbsp of butter and allow it to melt.
6. Add the chicken pieces and cook each side for 3 minutes or until they turn golden brown. Remove from the skillet onto a clean plate.
For the Cauliflower Rice:
1. Add 2 tbsp of butter into the same skillet and allow it to melt.
2. Add the garlic and onion, then sauté until aromatic and soft.
3. Add the riced cauliflower and stir well coated with the melted butter. Cook for about a minute.
4. Add 2 tbsp of vegetable stock, lemon zest, and 1/2 of the parsley. Stir until well mixed.
5. Sprinkle the rest of the Parmesan cheese on top. Add more seasonings if necessary.
6. Put the chicken breasts back to the skillet on top of the cauliflower rice.
7. Garnish with red chilli pepper flakes, black pepper, and a generous amount of Parmesan cheese.
8. Serve and enjoy!
