Crunchy, crispy, and seriously tasty! These five-ingredient Chipotle Chicken Taquitos are the best quick appetizer, dinner, or snack. Fry them or baked them. Either way, these taquitos are satisfying!
Ingredients
1-2 chipotle peppers in adobo sauce, minced
3 c. shredded chicken (I used one large boneless chicken breast)
3 c. shredded cheese (like Monterey jack, cheddar, or a mixture of your favorite cheese)
2-3 c. canola oil for frying, (or 1 tbsp canola oil to brush the tortillas with if baking)
12 7” flour tortillas (if desired, you can use corn tortillas)
Toppings:
Pico de Gallo
Creamy Avocado Salsa Verde
Mexican crema or sour cream
Shredded lettuce
Shredded cotija cheese
How to make 5-Ingredient Chipotle Chicken Taquitos
Step 1: Combine the shredded chicken breast, chipotle peppers, and adobo sauce in a medium bowl. Adjust the peppers and adobo sauce to suit your taste.
Step 2: On a work surface, lay the tortillas. With 1/3 c. of the shredded chicken mixture, fill the bottom third of each tortilla and sprinkle with 1/4 c. of the shredded cheese. Now, tightly roll the tortillas, securing the ends with a toothpick.
To Fry:
Step 3: In a heavy bottom fry pan or pot, pour enough oil to cover half an inch or halfway up the sides of the tortillas. Heat the oil to 350 degrees F using a candy thermometer or by dropping a piece of tortilla into the oil. The oil is hot enough once it sizzles.
Step 4: To the hot oil, add the filled tortillas and cook (in batches) for about 2 minutes on each side until golden brown. To a plate or cutting board lined with paper towels, transfer the tortillas.
If Baking:
Prepare the oven. Preheat it to 425 degrees F. On a baking sheet that has been lined with parchment paper or foil, place the tortillas. Using canola oil, lightly brush the filled tortillas. Bake the tortillas for about 12 to 15 minutes until crisp and golden brown. Then, transfer them to a plate when done.
Step 5: Remove the toothpicks from the taquitos right before serving. Enjoy these Chipotle Chicken Taquitos by themselves or with avocado salsa verde, pico de gallo, sour cream or Mexican crema, shredded lettuce, and grated or crumbled cotija cheese. Enjoy!
