Super easy to make and the best ground beef enchilada casserole. This 5-ingredient recipe is a must-try. Throw this together in no time for the perfect weeknight dinner on busy days. To serve, this casserole is excellent to pair with Fresh Mexicorn, Spanish brown rice, or chicken fajita salad.
15 oz. enchilada sauce 1 can
8 corn tortillas 6-inch
1 c. shredded Mexican cheese blend
1 lb. lean ground beef
15 oz. black beans, rinsed and drained
½ avocado, chopped, optional topping
½ c. tomatoes, chopped, optional topping
How to make 5 Ingredient Ground Beef Enchilada Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. Using non-stick cooking spray, grease a 9 x 11-inch baking pan.
Step 2: Cook the ground beef in a large skillet over medium-high heat until no longer pink and cooked through. This takes about 6 to 9 minutes.
Step 3: Place the cooked ground beef, half of the enchilada sauce, and half of the cheese in a large bowl. Mix well until combined.
Step 4: On the bottom of the prepared baking dish, lay 4 of the tortillas. If needed, rip them to entirely cover the bottom of the pan.
Step 5: Place half of the beef mixture over the tortillas followed by half of the beans and drizzle with 1/4 cup of enchilada sauce. Do the same layers, one more time. On top, sprinkle the rest of the shredded cheese.
Step 6: Using foil, tent the pan. Place in the preheated oven and bake for about 30 minutes or until the casserole is completely cooked.
Step 7: Before serving, top the casserole with tomatoes and avocado or your favorite toppings. Enjoy!
To lighten up the dish, you can use ground turkey.
