Ingredients:
Chocolate Layer
1 tbsp melted coconut oil
1 c chocolate chips, use dairy-free for vegan c
Peanut Butter Layer
2 tbsp melted coconut oil
A pinch of sea salt, if peanut butter isn’t salted
1/2 c natural peanut butter
1/4 c honey, use maple syrup for vegan cups
Directions:
Line with parchment paper a muffin tin.
Add the coconut oil and chocolate chips into a heat-proof bowl, then place it in the microwave. Heat for about a minute or until the chocolate chips are completely melted. Stir until well blended.
Add about 2 tsp of the melted chocolate into the bottom of the prepared muffin tin and spread it evenly. Put it in the freezer to chill for at least 10 minutes.
In another heat-proof bowl, add sea salt, coconut oil, honey, and peanut butter. Place it in the microwave and heat until completely melted. Stir until well blended.
Remove the muffin tin from the freezer, then fill each cup with the peanut butter mixture. Put it back in the freezer to chill for 5 more minutes.
Add the rest of the chocolate to every cup. Chill for another 30 minutes or 1 hour.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to 5 to 7 days or 2 months in the freezer.
Feel free to use dairy-free chocolate chips for this recipe.
