Every time I serve this dish, it’s always a hit! It has all the things you wish to taste in one dish. Meat, cheese, and veggies! You have got to give this one a try. You need this in your life, believe me!
Ingredients:
3 cups uncooked elbow macaroni
Bacon:
2 tablespoons butter
12 slices bacon (diced into 1-2-inch pieces)
Chicken:
1.5-2 lbs. uncooked chicken (cubed)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 tablespoon paprika
Veggies:
1 green bell pepper (diced)
1 medium onion (diced)
2 tablespoons minced garlic
Cheesy Mixture:
3 tablespoons butter
1/3 cup all-purpose flour
3 cups of milk
1 package Dry Ranch Mix (optional)
1 package (8oz) cream cheese (room temperature)
3 cups shredded Cheddar cheese
1 can (10 3/4 oz) cream of chicken soup, condensed
Toppings:
Cooked bacon
1 cup shredded cheddar cheese
1/4 cup panko crispy bread crumbs (optional)
Directions:
Step 1: Ready the oven and preheat to 190 degrees C.
Step 2: Cook the macaroni and refer to instructions on the package. Drain and rinse with cold water to stop the cooking process.
Step 3: Place a large skillet on the stove and turn the heat to medium-high.
Step 4: Add the bacon and cook until greasy and brown.
Step 5: Place the cooked bacon in a clean bowl.
Step 6: Discard the grease from the skillet and leave about 2 tablespoons.
Step 7: Add the chicken in the same skillet and season with paprika, salt, and pepper to taste. Stir and cook until well mixed and the chicken runs out of juices.
Step 8: Place the cooked chicken on a clean plate then set aside.
Step 9: Add the bell pepper, onion, and garlic in the skillet. Cook and stir for 3 minutes or until everything are tender. Remove from the skillet and set aside.
Step 10: Add 3 tablespoons of butter and allow it to melt. Add flour and whisk until it forms into a paste.
Step 11: Pour in milk and Ranch mix. Beat until well mixed.
Step 12: Add in cream of chicken soup and cream cheese. Stir until well mixed, then add 3 cups of Cheddar cheese and remove from the heat.
Step 13: In a large mixing bowl, add the cooked noodles, cheese mixture, veggies, and chicken. Stir until well mixed.
Step 14: Transfer the mixture into a 13×9-inch baking dish.
Step 15: Sprinkle the crumbled bacon and 1 cup of shredded cheese on top.
Step 16: Bake inside the preheated oven for 20 to 30 minutes or until bubbly.
Step 17: Remove from the oven and allow it to cool at room temperature.
Step 18: Serve and enjoy!
