This a must-try! To all Instant Pot lovers out there, this recipe is to die for. Enjoy!
Ingredients:
1 small yellow onion
3 cloves garlic
10 oz dried lasagna noodles (about 11)
2 tbsp olive oil
1 1/2 lb lean ground beef
2 tbsp tomato paste
1 tbsp dried Italian seasoning
1/2 to 1 tsp red pepper flakes
2 tsp kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 (24 to 25-oz) jar marinara sauce
3 c water, divided
1 c whole-milk ricotta cheese
1/2 c grated Parmesan cheese
4 oz part-skim mozzarella cheese
2 tbsp fresh parsley leaves
Directions:
Step 1: Press the “Sauté” button on the Instant Pot.
Step 2: Slice the onion into small pieces, break 10 lasagna noodles, and minced the garlic.
Step 3: Add olive oil into the pot and allow it to become hot.
Step 4: Add the ground beef and cook for 4 minutes or until brown, then stir until crumbly. Cook for another 2 minutes.
Step 5: Add the garlic and onion. Sauté for about 5 minutes or until aromatic and translucent.
Step 6: Add 2 tablespoons of tomato paste, 1/2 teaspoon of red pepper flakes, 1 tablespoon of dried Italian seasoning, 1/4 teaspoon of pepper, and 1 teaspoon of salt. Stir and cook for 1 minute or until the colour of the sauce becomes dark.
Step 7: Add 2 cups of water, 1 jar of marinara sauce, and the rest of the salt and pepper. Stir and make sure to scrape the bottom to get the brown bits.
Step 8: Arrange the lasagna noodles over the sauce and gently press them down just enough to submerge them into the sauce.
Step 9: Add the rest of the water and give it a good stir until well combined.
Step 10: Seal the pot and cook for about 5 minutes on high pressure.
Step 11: In a medium mixing bowl, add 1/2 cup of grated Parmesan cheese, and 1 cup ricotta cheese. Stir until well mixed.
Step 12: Chop 2 tablespoons of parsley leaves and shred mozzarella cheese.
Step 13: Do a quick-release on the pot.
Step 14: Add the ricotta mixture on top of the lasagna and sprinkle a generous amount of mozzarella on top as well.
Step 15: Cover the pot again and allow the cheese to melt for about 10 minutes.
Step 16: Sprinkle the chopped parsley on top.
Step 17: Serve and enjoy!
