Ingredients:
1 lb ground beef
1 small onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 clove garlic, chopped
1 (14.5 oz) can petite diced tomatoes
1 cup ketchup
1 tbsp brown sugar
1 tsp yellow mustard
salt and ground black pepper to taste
2 c frozen whole-kernel corn
1 (16 oz) package penne pasta
1 ½ c shredded Colby-Jack cheese
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Place a large skillet on the stove and turn the heat to medium-high.
Step 3: Add the beef, garlic, onion, and green & red bell peppers. Cook for about 5 minutes or until brown, aromatic, and translucent. Remove any excess fat.
Step 4: Add the ketchup, tomatoes, mustard, brown sugar, salt, and pepper. Stir until just mixed.
Step 5: Reduce the heat to medium-low and allow the mixture to simmer for 10 minutes.
Step 6: Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Step 7: Add the corn and cook for 5 minutes, then drain.
Step 8: Place another pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Step 9: Add the penne and cook for about 11 minutes or until al dente. Drain and rinse with cold water to stop the cooking process.
Step 10: Add everything in a large mixing bowl, then toss until well combined.
Step 11: Transfer the mixture into a 9×13-inch baking dish.
Step 12: Place it inside the preheated oven and bake for 20 minutes or until done.
Step 13: Serve and enjoy!
