Ingredients:
1 tsp oil or butter
2 1/2 lbs bone-in chicken thighs (or a mix of thighs and breasts)
1 large sweet onion, peeled and chopped
2-4 cloves garlic, minced
1 1/2 c sliced celery
1 1/2 c sliced carrots
1 tbsp fresh thyme leaves (1 teaspoon dried)
12 c chicken broth
2 bay leaves
1/4 tsp turmeric
8 ounces Kluski egg noodles
1/4 c chopped parsley
2 tbsp fresh lemon juice
1 1/2 tsp cornstarch
Salt and pepper
Directions:
Step 1: Place an 8-quart soup pot on the stove and turn the heat to medium.
Step 2: Add oil and allow it to become hot.
Step 3: Season the chicken thighs with salt and pepper.
Step 4: Add the chicken thighs into the pot and sear each side for 3 minutes or until brown.
Step 5: Remove the chicken thighs from the pot to a clean plate.
Step 6: Add the garlic and onions into the pot with the chicken grease. Sauté for 3 minutes or until aromatic and translucent.
Step 7: Add the carrots, thyme, and celery. Sauté for 2 more minutes.
Step 8: Add bay leaves, turmeric, chicken broth, and the seared chicken thighs.
Step 9: Sprinkle salt and pepper to taste. Stir until well combined.
Step 10: Cover the pot and bring the mixture to a simmer for about 30 minutes.
Step 11: Discard the bay leaves and remove the chicken thighs from the pot to a chopping board.
Step 12: Add the egg noodles into the pot and cook for about 6 minutes or until al dente.
Step 13: Debone the chicken and shred them into small pieces.
Step 14: Add shredded chicken back to the pot. Stir until well mixed.
Step 15: Add lemon juice and cornstarch into the pot. Whisk until well mixed and the texture becomes thick.
Step 16: Add the chopped parsley and stir until well mixed.
Step 17: Serve and enjoy!
