Ingredients:

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tbsp Worcestershire sauce
1 Egg, beaten
1 tsp dried Italian herbs
2 tsp salt
1 tsp ground black pepper
½ tsp cayenne pepper
1 c plain bread crumbs
1 tsp olive oil
Glaze Ingredients:
2 tbsp brown sugar
2 tbsp ketchup
2 tbsp Dijon mustard
hot pepper sauce to taste
Directions:
Step 1: Prepare the oven and preheat 160 degrees C or 325 degrees F.
Step 2: In a food processor, add the carrot, onion, red bell pepper, celery, mushrooms, and garlic. Pulse until the texture becomes a puree.
Step 3: Transfer into a large mixing bowl.
Step 4: Add the ground chuck, Worcestershire sauce, egg, Italian herbs, cayenne pepper, salt, and pepper. Mix well.
Step 5: Form a ball out of the meatloaf, then grease a baking dish.
Step 6: Place the meatloaf ball into the prepared baking dish and spread it evenly.
Step 7: Place the baking dish inside the preheated oven and bake for 15 minutes or until hot.
Step 8: Prepare the glaze by mixing ketchup, brown sugar, hot sauce, and Dijon mustard into a small mixing bowl. Stir until well blended.
Step 9: Remove the hot meatloaf from the oven and spread the glaze over.
Step 10: Put the meatloaf back into the oven and bake for another 30 minutes or until done.
Step 11: Remove from the oven and allow the meatloaf to cool at room temperature.
Step 12: Serve and enjoy!
