Ingredients for the Greek yoghurt sauce:
1 c Greek yoghurt
2 tsp grated lemon zest
2 tbsp fresh lemon juice
2 garlic cloves minced
1 tbsp olive oil
½ tsp salt
Ingredients for the burgers:
1 pound ground chicken
1 medium zucchini coarsely chopped
1 ear fresh corn husks and silk removed and kernels cut from the cob
½ medium red bell pepper finely diced
3 green onions thinly sliced
1 large egg lightly beaten
½ c panko bread crumbs
2 tbsp chopped cilantro
3 garlic cloves minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
½ tsp freshly ground black pepper about 3-4 tbsp olive oil for searing
Ingredients for the Tomato-Cucumber Relish:
1-pint cherry or grape tomatoes quartered
⅓ medium seedless English cucumber finely diced
2 green onions finely sliced
¼ c finely chopped fresh cilantro
1 clove garlic minced
zest of 1 lemon
2 tbsp fresh lemon juice
Pinch of salt
Directions:
Step 1: In a mixing bowl, add all the ingredients for the Greek yoghurt. Stir until well mixed, then place it inside the fridge.
Step 2: Prepare the oven and preheat to 425 degrees F.
Step 3: In another mixing bowl, add all the ingredients for the burger aside from the oil. Use your hands to mix everything.
Step 4: Form patties out of the mixture.
Step 5: Place a frying pan on the stove and turn the heat to medium.
Step 6: Add oil and allow it to become hot.
Step 7: Add the patties and cook each side for 2 minutes or until they turn golden brown.
Step 8: Remove the patties from the pan onto a baking sheet.
Step 9: Place the baking sheet inside the preheated oven and bake for 10 minutes.
Step 10: In a mixing bowl, add all the ingredients for the relish. Stir until well mixed.
Step 11: Serve and enjoy!
