Every meal is not complete without a salad. Am I right? Well, lucky for you I have the best salad recipe! I am so glad that I gave this one a try because now, I get to share it with you, friends! With this very basic set of ingredients, you will surely have the best salad experience ever! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! By the way, feel free to add more ingredients if you prefer. Ingredients:
2 lbs red boiling potatoes, scrubbed
2 tbsp red wine vinegar
½ tsp salt
½ tsp freshly ground black pepper
3 hard-cooked eggs
1 small celery stalk
¼ c chopped sweet pickle (not relish)
3 scallions
2 tbsp chopped fresh parsley
½ c mayonnaise
2 tbsp Dijon-style mustard
Directions:
1. Place a large pot with water on the stove and turn the heat to high.
2. Add the potatoes and allow the water to boil. Cover the pot and cook the potatoes for about 30 minutes or until fork-tender.
3. Drain the potato and rinse with cold water to cool.
4. Slice the potatoes into about 3/4-inch cuts.
5. Arrange the potatoes into a large serving bowl.
6. Add the vinegar, salt, and pepper over the potatoes.
7. Slice the eggs, pickles, and celery into small cuts.
8. Slice the scallions into thin cuts.
9. Add all the ingredients into the bowl with the potato slices.
10. Add the mayonnaise as well. Toss everything until well mixed.
11. Cover the bowl, then place it inside the fridge to chill for a few minutes.
12. Serve cold and enjoy!
