I am sure that everyone in your family is going to love this incredible Spinach and Chicken Casserole! I know it because it is super delicious! You just have to give this recipe a try and taste it yourself! You are so in for a treat. Enjoy!
Ingredients:
2 c cubed boneless chicken breast
1 c Italian salad dressing, or as needed
½ tsp garlic powder
¼ tsp lemon pepper
1 (8 oz) package fresh spinach
2 (8 oz) packages cream cheese, softened
½ c chopped fresh chives
¼ c olive oil
1 clove garlic, minced
1 pinch salt and ground black pepper to taste
2 c chicken broth
1 c shredded mozzarella cheese
Directions:
1. In a mixing bowl, add Italian salad dressing.
2. Add the chicken and toss until well coated.
3. Place the bowl inside the fridge to marinate for about 3 hours.
4. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
5. Remove the chicken from the bowl, then season with lemon pepper and garlic powder.
6. Arrange the chicken into a casserole dish.
7. Place the spinach on top of the chicken.
8. In a mixing bowl, add chives, cream cheese, garlic, olive oil, salt, and pepper. Stir until well combined.
9. Add chicken broth gradually and stir every addition until well mixed.
10. Pour the mixture over the spinach and chicken.
11. Cover with aluminium foil the casserole dish.
12. Place it inside the preheated oven and bake for about 20 minutes or until done.
13. Remove the foil cover and sprinkle a very generous amount of cheese on top.
14. Bake for another 20 minutes or until the cheese has melted completely.
15. Remove from the oven and allow it to cool at room temperature.
16. Serve and enjoy!
