Ingredients:
6 medium Yukon Gold Potatoes
Cheese Sauce
4 tbsp butter
1 yellow onion, sliced into strings
3 cloves garlic, minced
¼ c all-purpose flour
1 1/2 c half and half, or milk
3/4 teaspoon dried rosemary
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon sage
2 c cheddar cheese, shredded
1/2 c Gruyere cheese, shredded
1 c cooked ham, diced
Topping/Garnish
1/4 c Parmesan, finely grated into a powder
1 tbsp Fresh Parsley, roughly chopped
Directions:
For the Cheese Sauce:
1. Shred and set aside the Gruyere cheese. Reserve 1/2 cup for later use.
2. Place a saucepan on the stove and turn the heat to medium.
3. Add butter and allow it to melt.
4. Add the onions and sauté until they caramelize.
5. Add the garlic and sauté for a minute or until aromatic.
6. Add the flour gradually and whisk every addition. Cook for about a minute.
7. Place the milk inside the microwave and heat it for about 30 seconds.
8. Add the milk into the saucepan and stir until well blended.
9. Add oregano, rosemary, sage, and thyme. Stir until well mixed and simmer for about 5 minutes, then remove the pan from the heat.
10. Add the reserved shredded cheese and half of the Gruyere, then stir until well blended.
11. Add ham and stir until well combined.
To Assemble:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Slice the peeled potatoes into thin cuts.
3. Apply cooking spray in a 9×13-inch casserole dish.
4. Arrange the potato slices into the prepared casserole dish overlapping.
5. Sprinkle salt and pepper to taste.
6. Spread 1/3 of the cheese on top of the potatoes.
7. Repeat the process until all the potatoes and cheese are arranged in layers.
8. Sprinkle more cheese on top and ham.
9. Place it inside the preheated oven and bake for about 30 minutes or until done.
10. Serve and enjoy!
