Ingredients:
1 tbsp oil
1 1/2 lb bone-in and skin-on chicken thighs (4-6 thighs)
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 tsp fresh thyme, chopped (or 1 teaspoon dry thyme)
2 tbsp flour
1 c chicken broth
1/2 c asiago cheese (or parmesan), grated
salt and pepper to taste
Directions:
1. Place a large skillet on the stove and turn the heat to medium-high.
2. Add oil and allow it to become hot.
3. Season the chicken thighs with salt and pepper.
4. Place the chicken thighs into the skillet and sear each side for about 5 minutes or until they turn brown. Remove from the skillet onto a clean plate.
5. In the same skillet, add garlic and onion. Sauté until aromatic and translucent.
6. Add thyme and flour. Stir and cook for about a minute.
7. Add the broth and scrape the bottom to get the brown bits.
8. Add asiago and stir until well blended.
9. Season with salt and pepper.
10. Put the chicken back to the skillet and cover it with a lid.
11. Prepare the oven and preheat to about 200 degrees C or 400 degrees F.
12. Transfer the skillet into the preheated oven and roast the chicken thighs for 15 minutes or until done.
13. Remove from the oven and place the skillet on the stove, then turn the heat to medium-low. Simmer for about 15 minutes or until done.
14. Serve hot and enjoy!
