Ingredients:
Gingerbread Cupcakes
1 1/2 c all-purpose flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp salt
1/2 c unsalted butter * at room temperature
1/2 c dark brown sugar, packed
1 egg * at room temperature
1/2 c molasses
1/2 c milk * at room temperature
Cinnamon Vanilla Buttercream Frosting
1/2 c unsalted butter * at room temperature
1 tsp ground cinnamon
1 tbsp vanilla extract
2 c powdered sugar
Directions:
For the Gingerbread Cupcakes:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Line with paper liners a cupcake pan.
3. In a mixing bowl, add the baking soda, all-purpose flour, ground ginger, ground cinnamon, ground allspice, ground nutmeg, and salt. Stir until well combined.
4. Add brown sugar and butter to the bowl of a stand mixer. Beat until well combined.
5. Add egg and molasses, then beat again until well mixed.
6. Add the milk into the flour mixture and stir until well mixed. Make sure to scrape the bottom as well.
7. Fill each cupcake with the mixture.
8. Place them inside the preheated oven and bake for about 20 minutes or until a toothpick comes out clean after inserting it in the middle.
9. Remove from the oven and allow it to cool at room temperature.
For the Cinnamon Vanilla Buttercream Frosting:
1. In the bowl of a stand mixer, add the butter and beat until creamy.
2. Add the vanilla extract and cinnamon, then beat until well blended.
3. Add the powdered sugar gradually and beat every addition until well blended.
4. Top each cupcake with frosting.
5. Serve and enjoy!
