I love how simple this recipe is! I mean, all you need are these basic ingredients, and you will surely have the best lunch or dinner ever! Ingredients:
1 lb chicken breasts, boneless skinless, cut into 1-inch cubes
1/4 c cornstarch
4 c vegetable oil + 2 teaspoons vegetable oil
1/2 tsp garlic, chopped
1 tsp rice wine
2 tbsp soy sauce
2 jalapeno peppers, sliced
2 tbsp sugar
Directions:
1. Add the chicken and cornstarch inside a resealable bag. Shake the bag until the chicken breasts are well coated with the cornstarch.
2. Let them rest for about 5 minutes.
3. Prepare the deep fryer and preheat to 190 degrees C or 375 degrees F.
4. Add about 4 cups of vegetable oil and allow it to become hot.
5. Add the chicken breasts into the hot oil and cook until they turn golden brown.
6. Remove the chicken breasts from the oil onto a clean plate lined with paper towels to drain any excess oil.
7. Place a wok on the stove and turn the heat to medium.
8. Add 2 tbsp of vegetable oil and allow it to become hot.
9. Add the jalapenos and saute until soft.
10. Add the garlic, soy sauce, rice wine, and chicken breasts. Stir and cook for about a minute.
11. Add sugar and stir until well mixed. The texture of the sauce should become thick.
12. Remove from the heat.
13. Serve immediately and enjoy!
