Ingredients:
6 tbsp butter (room temperature or use olive oil)
1 1/2 c chicken broth
1 (4 lbs.) whole chicken
Stuff Chicken (optional):
1 lemon (halved)
6 cloves garlic
4 sprigs of fresh rosemary
4 sprigs of fresh thyme
3 bay leaves
4 sprigs of fresh oregano
Buttery Mixture for Broiling:
1 tsp dried oregano
1 tbsp onion powder
1/2 c butter (unsalted)
1 tsp thyme powder
1 tsp salt
1/2 tbsp paprika
1/4 tsp ground black pepper
1 tbsp garlic powder
Gravy (optional):
3 tbsp all-purpose flour
remaining cooking liquid
4 tbsp unsalted butter
Directions:
1. Put the chicken into the Instant Pot.
2. Discard any giblets off the chicken.
3. Stuff the fresh chicken with lemon, fresh thyme, oregano, rosemary, bay leaves, and garlic cloves.
4. Rub 3 tbsp of melted butter all over the chicken and a bit of seasoning.
To Cook:
1. Place a trivet into the Instant Pot, then lay the chicken on it.
2. Cover and seal the Instant Pot.
3. Cook for about 24 minutes on high pressure.
4. Do a natural release for about 15 minutes.
5. Prepare the oven and turn the broiler on.
6. In a mixing bowl, add garlic powder, onion powder, melted butter, paprika, oregano, thyme powder, salt, and pepper. Stir until well mixed.
To Broil:
1. Line with foil on a baking sheet.
2. Remove the chicken from the pot and transfer it onto the prepared baking sheet.
3. Generously brush the entire chicken with the mixture.
4. Broil for 5 to 8 minutes inside the preheated oven until it turns golden brown.
For the Gravy:
1. In the same pot, add the rest of the liquid ingredients. Scrape the bottom of the pot to get the brown bits.
2. Press the “Sauté” button on the pot, then add butter and allow it to melt.
3. Add flour and whisk until well mixed. Cook for a minute.
4. Add salt and pepper to taste.
5. Serve with the chicken. Enjoy!
