Ingredients:
4 chicken breasts (use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally)
6 ounces cream cheese, cold, refrigerated, and sliced into 8 slices
1 c Cheddar cheese, shredded
1 tbsp olive oil
8 strips bacon, cooked, chopped
salt and pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Apply olive oil to the bottom of a casserole dish.
3. Arrange the chicken breasts into the prepared casserole dish.
4. Season the chicken breasts with salt and pepper.
5. Add the cold cream cheese over the chicken breasts.
6. Place the bacon pieces over the cream cheese.
7. Sprinkle a generous amount of shredded Cheddar cheese over the bacon.
8. Place the casserole dish inside the preheated oven and bake for about 20 to 30 minutes or until done.
9. Remove from the oven and allow it to cool for a few minutes at room temperature.
10. Serve warm and enjoy!
