Ingredients:
1 tbsp olive oil
12 oz. mushrooms, cleaned and thickly sliced
3 boneless skinless chicken breasts cut in half horizontally into cutlets
½ tsp salt
1 tsp pepper
½ c all-purpose flour
4 tbsp unsalted butter, divided
1 ½ c chicken broth, low sodium
2 garlic cloves, minced
½ tsp garlic powder
2 large shallots, sliced thin
2 tsp cornstarch dissolved in 2 tbsp water or broth
½ c heavy cream
1 tsp Dijon mustard
2 large springs of fresh thyme
½ c dry white wine
Directions:
1. Use paper towels to pat dry the chicken breasts.
2. Horizontally slice each chicken breast into two.
3. Use a meat mallet to gently pound each chicken piece.
4. Add garlic powder, flour, salt, and pepper into a mixing bowl. Whisk until well mixed.
5. Place a large skillet on the stove and turn the heat to medium.
6. Add 1 tbsp of oil and 2 tbsp of butter, then allow them to become hot.
7. Coat each chicken piece with the flour mixture, then shake off any excess.
8. Add the chicken pieces into the skillet and cook each side for 5 minutes or until they turn brown. Remove from the skillet.
9. Add the rest of the butter into the same skillet and allow it to melt.
10. Add the mushroom slice and cook until soft.
11. Add the shallots and sauté until a bit caramelized.
12. Add the wine and scrape the bottom of the skillet to get the brown bits.
13. Add the mustard, chicken broth, cream, and thyme. Stir until well mixed and allow the mixture to boil for about 5 minutes.
14. Add the slurry, then stir until well blended and thick.
15. Put the chicken back to the skillet and toss until well coated by the sauce. Simmer for a few minutes.
16. Discard the thyme sprigs, then sprinkle salt and pepper to season.
17. Remove from the heat, then sprinkle freshly chopped herbs.
18. Serve and enjoy!
