Ingredients:
Graham Cracker Crust
⅓ c organic sugar
⅔ c butter, melted
2⅔ c graham crackers crumbs
Lemon Cheesecake
3 Eggs
24 ounces cream cheese
3 tablespoons lemon juice, freshly squeezed
1¼ c sugar
2 tablespoons grated lemon peel
Blueberry Topping
1 teaspoon vanilla
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Add sugar and graham cracker crumbs into a mixing bowl. Whisk until well mixed.
3. Add the melted butter and stir until well blended.
4. Transfer the mixture into a 13×9-inch baking dish and press it evenly.
5. Place it inside the preheated oven and bake for about 15 minutes or until a toothpick comes out clean after inserting it in the middle.
6. Remove from the oven and allow it to cool for a few minutes at room temperature.
For the Lemon Cheesecake:
1. In a mixing bowl, add the cracked eggs and whisk until creamy.
2. In another mixing bowl, add the sugar and cream cheese. Beat until well blended.
3. Transfer the eggs and beat until well mixed.
4. Add the grated lemon, vanilla, and lemon juice. Stir until well mixed.
5. Transfer the lemon cheesecake mixture into the prepared crust and spread it evenly.
6. Place it inside the preheated oven and bake for about 45 minutes or until done.
7. Remove from the oven and allow it to cool for a few minutes at room temperature.
8. Place it inside the fridge to chill for about 6 hours or overnight.
For the Blueberry Topping:
1. Pour the blueberry topping over the cheesecake and spread it evenly.
2. Slice into even pieces.
3. Serve and enjoy!
