You haven’t had the best chicken if you have never had this City Chicken yet! Oh, man, you have got to give this recipe a try. I’m telling you; it will be the best decision you will ever make today. Enjoy!
Ingredients:
1/4 c Eggbeaters or two eggs are beaten with 1 tablespoon water
1/4 c all-purpose flour, seasoned with salt and pepper
3 tablespoons olive oil or vegetable oil
1 lb. cubed pork sirloin plus skewers
1/2 c Italian seasoned dry bread crumbs
1 can or jar of gravy (pork or mushroom or one of each mixed), heated
1/2 c chicken stock
1/4 teaspoon smoked paprika (optional)
Directions:
1. Prepare the oven and preheat to 162 degrees C or 325 degrees F.
2. Apply cooking spray in a 9×13-inch glass baking dish.
3. Add eggbeaters, breadcrumbs, and seasoned flour in separate mixing bowls.
4. Impale about 4 pork cubes onto every skewer.
5. Sprinkle flour and make sure to fully coat.
6. Coat with the eggbeaters, then into the breadcrumbs. Shake off any excess.
7. Place a nonstick pan on the stove and turn the heat to medium-high.
8. Add a tablespoon of oil and allow it to become hot.
9. Add the coated pork cubes and cook each side until golden brown.
10. Remove from the pan and move them into the greased baking dish. Make sure to leave a small space between each cube.
11. Pour the chicken to the bottom of the prepared pan.
12. Cover everything with aluminium foil.
13. Place them inside the preheated oven and bake for about 1 to 2 hours or until the pork is tender to bite.
14. Remove from the oven and let them rest for a few minutes at room temperature.
15. Serve warm with gravy. Enjoy!
