Bread Ingredients:
1/3 c vegetable oil
1 tsp cinnamon
1/2 tsp baking powder
1 c sugar
2 large eggs, beaten
1 c unsweetened applesauce
2 1/2 c all-purpose flour
3/4 c dried cranberries or 2 c of fresh cranberries, chopped
1 tsp baking soda
1/2 tsp salt
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a 9×5-inch loaf pan.
3. In a mixing bowl, add sugar, baking soda, flour, salt, cinnamon, and baking powder. Whisk until well combined.
4. In another mixing bowl, add the cracked eggs and beat until creamy.
5. Add the applesauce and stir until well blended.
6. Add the applesauce mixture into the bowl with the flour mixture, then whisk until well mixed.
7. Add the cranberries and stir until well mixed.
8. Transfer the batter into the prepared baking pan and spread it evenly.
9. Place it inside the preheated oven and bake for about 55 minutes or until a toothpick comes out clean after inserting it in the middle.
10. Remove from the oven and allow the bread to cook for a few minutes at room temperature.
11. Slice the bread into even pieces.
12. Serve and enjoy!
