Ingredients:
3/4 c shredded cheddar cheese divided
8 oz. ham steak cubed
12 large Eggs
1/2 tsp salt
1/2 c milk (I used skim)
2 green onions sliced thin
1/4 tsp black pepper
1/4 tsp garlic powder
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a muffin tin.
3. Add spices, eggs, and milk into a large mixing bowl. Whisk until well blended.
4. Add the green onions, ham, and 1/2 cup of shredded cheddar cheese. Stir until well blended.
5. Pour the batter into the prepared muffin tins and spread it evenly.
6. Top each muffin with the rest of the cheese. You can always add more if you want.
7. Place the muffin tins inside the preheated oven and bake the batter for about 30 minutes or until a toothpick comes out clean after inserting it in the centre of the muffin.
8. Remove from the oven and allow the muffins to cool for a few minutes at room temperature.
9. Serve warm and enjoy!
