I am so psyched to share this recipe with you today! These delicious meatballs smothered in a delicious tomato sauce will surely grace your dining table! Surprise everyone with this spectacular dish. Enjoy!
Ingredients:
The Meatballs:
1 Egg
1/4 c whole-wheat breadcrumbs
3 garlic cloves minced
1/4 c minced flat-leaf parsley
1 lb. lean ground turkey
1/2 tsp salt
1/2 medium onion grated
1/2 tsp ground pepper
1 tsp ground oregano
The Sauce:
1 28 oz. can of crushed tomatoes
4 basil leaves thinly sliced
2 tsp olive oil
1 14 oz. can of crushed tomatoes
1/4 c minced flat-leaf parsley
1/4 tsp ground pepper
1/4 tsp salt
3 garlic cloves minced
1 small onion chopped
1/4 tsp red pepper flakes
1 tsp ground oregano
Directions:
For the Meatballs:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray onto a baking sheet.
3. Add garlic, ground turkey, breadcrumbs, onion, egg, parsley, salt, pepper, and oregano into a mixing bowl. Whisk until well blended.
4. Form 8 balls out of the meat mixture, then lay them onto the prepared baking sheet.
5. Place the baking sheet inside the preheated oven and bake the meatballs for about 20 minutes.
For the Sauce:
1. Place a non-stick skillet on the stove and turn the heat to medium.
2. Add olive oil and allow it to become hot.
3. Add the onion and sauté until translucent.
4. Add the oregano, garlic, salt, and pepper. Sauté until aromatic.
5. Add the crushed tomatoes, then stir until well blended. Allow the sauce to boil.
6. Add the basil and parsley, then stir until well blended. Simmer for about 10 minutes.
7. Arrange the meatballs over the sauce. Spoon some of the sauce on top.
8. Remove from the heat, then sprinkle freshly chopped herbs on top to garnish.
9. Serve and enjoy!
Note:
I like serving these meatballs over pasta or rice.
