Ingredients:
1-inch sheet nori (seaweed (find it in grocery stores near the take to go sushi or Asian sauces aisle)
Sesame seeds to garnish
1 tablespoon Wonton or tortilla strips for garnish
1-pound frozen cooked shrimp, defrosted
Bang Bang sauce
1 tablespoon sweet chilli sauce
2 teaspoon Sriracha
1/2 c light mayo
Quick guacamole
1 clove small garlic minced
1/4 teaspoon salt
1 tablespoon lime juice
1 avocado mashed
Mango salsa
2 tablespoons red onion diced
1/2 mango diced
2 tablespoons cilantro chopped
1/4 teaspoon salt
2 tablespoons red pepper diced
1 tablespoon lime juice
Sushi rice
2 tablespoons rice wine vinegar
1/2 teaspoon salt
1 tablespoon sugar
1/2 c dry sticky rice
3/4 c water
Directions:
1. Refer to the directions provided on the package of the sticky rice on how to cook it.
2. In a mixing bowl, add bang bang sauce, and mango salsa. Stir until well blended.
3. Add mango salsa into a 2-cup measuring cup.
4. Add the avocado mixture on top of the salsa and spread it evenly.
5. Place the shrimp, nori, and sticky rice over.
6. Press the rice hard to tighten up the layers.
7. Inver the cup and lose the layers onto a clean plate.
8. Add tortilla chips over the mango salsa layer.
9. Drizzle bang bang sauce on top.
10. Sprinkle sesame seeds on top to garnish.
11. Serve right away and enjoy!
