You don’t need an oven to make this delicious cheesecake! Yes, you read it right. Just follow these simple steps to know-how. Enjoy!
Ingredients:
Blueberry Sauce
½ c water
1 tbsp cornstarch
2 c blueberries, fresh or thawed
2 tbsp water
juice of 1 lemon
⅓ c granulated white sugar
Crust
½ c unsalted butter, melted
2 c (7 ounces) graham cracker crumbs
Filling
1 tsp vanilla extract
2 tbsp granulated sugar
1 c heavy whipping cream (36% – 39% fat content)
3 c cream cheese, softened
½ c granulated sugar
Directions:
1. In a small bowl, add 2 tbsp of water and cornstarch. Stir until well blended.
2. Place a heavy-bottomed pan on the stove, then add sugar, blueberries, lemon juice, and 1/2 cup of water. Stir until well blended.
3. Turn the heat to medium-high and simmer the mixture for 5 minutes.
4. Add the slurry and stir until well blended. Allow the mixture to boil until the texture becomes thick.
5. Transfer the content of the pan into an oven-safe bowl. Let it sit at room temperature to cool for at least 30 minutes.
6. Place it inside the fridge to chill for 2 hours or overnight.
Crust:
1. Line with parchment paper a 9-inch springform pan.
2. Add sugar, melted butter, and graham crackers into a mixing bowl. Stir until well blended.
3. Move the mixture into the prepared pan and spread it evenly. Place it inside the freezer.
4. Add 2 tbsp of sugar and whipping cream into a mixing bowl, then beat until well blended. Place it inside the fridge.
5. In a separate mixing bowl,1/2 cup sugar, vanilla, and cream cheese. Beat until well blended.
6. Add the blueberry sauce, then stir until well blended.
7. Add 1/3 of the whipped cream and stir until well blended.
8. Add the rest of the cream and stir until well incorporated.
9. Add the mixture on top of the prepared crust and spread it evenly.
10. Place it inside the fridge to chill overnight.
11. Serve and enjoy!
Note:
Place any leftovers in an airtight container. Place them inside the fridge. They can last up to 2 days or 1 month inside the freezer.
