Ingredients:
1 large Egg, lightly beaten
1/3 c unsalted butter
1/2 c whole milk
2 lbs. of potatoes, peeled and cut into 1-inch chunks
1/2 c bacon bits, cooked and crumbled
1/4 yellow onion, finely chopped
1/3 c whole milk
2/3 c seasoned dry bread crumbs
1 tsp kosher salt
1/4 tsp coarse ground black pepper
1 1/2 lbs. Ground Beef, (85/15)
1 c cheddar cheese, shredded
1/2 tsp Kosher salt
1/4 tsp coarse ground black pepper
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Add breadcrumbs, beef, milk, onion, salt, pepper, and egg into a mixing bowl. Whisk until well blended.
3. Transfer the mixture to a 9×9-inch baking dish and spread it evenly.
4. Place it in the preheated oven and bake for about 15 minutes. Discard any accumulated grease.
5. Meanwhile, place a pot with enough water to submerge the potatoes on the stove and turn the heat to high. Turn the heat to high and allow the water to boil.
6. Add the potatoes and cook for about 15 minutes or until fork-tender. Drain and put the potatoes back into the pot.
7. Add butter, milk, salt, and pepper. Mash everything until well blended and smooth.
8. Add the mashed potatoes on top of the meatloaf and spread it evenly.
9. Scatter the bacon and cheese on top.
10. Bake for 15 more minutes or until the cheese turns golden brown.
11. Remove from the oven and allow the casserole to rest for a few minutes at room temperature.
12. Serve warm and enjoy!
