These delicious treats are simply the best! If you are a fan of spicy foods, then you have got to try this recipe! You will surely love these Spicy Vegan Lentil Cakes! Ready in just 35 minutes, this recipe is to die for!
Ingredients:
oil, for frying
200g (1 c) red lentils
4 tablespoons psyllium husks, or one large egg
1 small bunch of parsley, chopped
1 medium onion, diced
about 60g (½ c) flour of choice, I used some chickpea flour
2 bell peppers, I used one red and one yellow, chopped
1 teaspoon spicy paprika
4 tablespoons nutritional yeast flakes
2 teaspoons smoked paprika
½ teaspoon chili flakes
sea salt and ground pepper, to taste
Directions:
1. In a pot with water, add the lentils. Make sure to cover the lentils.
2. Place the pot on the stove and turn the heat to medium. Allow the water to boil and cook the lentils for 15 minutes. Remove from the stove.
3. Strain and transfer the lentils into a large mixing bowl.
4. Use a fork to mash the lentils.
5. Add the remaining ingredients into the bowl with the mashed lentils aside from the oil. Stir until well blended.
6. If the texture gets too wet, add a bit of flour and stir until you get your desired texture. You can also place it in the fridge to chill for at least 10 minutes.
7. Place a non-stick pan on the stove and turn the heat to medium.
8. Add a bit of sesame oil and allow it to become hot.
9. Spoon the mixture into patties, then cook each side for 2 minutes or until done.
10. Serve and enjoy!
Notes:
This can last up to 3 to 4 days in the fridge.
