Ingredients:
32 ounces part-skim mozzarella cheese
16-22 ounces ricotta cheese
20 ounces Cascadian Farm frozen spinach, thawed and liquid squeezed
2 whole-wheat pizza dough
4-5 heads of garlic
Pepper flakes, optional
4 teaspoons olive oil
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Remove the tip of the whole garlic, then slice about 1/4-inch on top to see the flesh of the garlic cloves. Repeat the process with the rest of the garlic.
3. Drizzle olive oil over the garlic, then cover them with foil.
4. Place them inside the preheated oven and roast for about 30 to 40 minutes or until done.
5. Remove the garlic from the oven and allow them to cool at room temperature.
6. Gently press the bottom of the garlic to remove them from the coating.
7. Add the garlic into a mixing bowl, then mash them. I used the back of a spoon to mash them.
8. Add the ricotta cheese into the bowl with the mashed garlic, then stir until well blended.
9. Sprinkle whole wheat flour onto a flat surface.
10. Place the pizza dough onto the floured surface, then roll it out using a rolling pin.
11. Transfer the pizza dough onto a pizza stone. Repeat this process with the other pizza dough.
12. Add 1/2 of the ricotta cheese mixture on top of the pizza dough.
13. Sprinkle mozzarella cheese over the cheese mixture. Top with spinach.
14. Place the pizzas inside the preheated oven and bake them for about 18 to 20 minutes or until done.
15. Remove the pizzas from the oven, then sprinkle red pepper flakes on top if you wish.
16. Serve right away and enjoy!
