If you are looking for a great dish to serve tonight, then you have got to try this recipe! This is a complete meal that everyone is going to love. Chicken, pasta, bacon, cheese, and a lot more! What’s not to like?
Ingredients:
6 bacon strips, COOKED, DRAINED OF FAT, AND CHOPPED
5 tomatoes (medium, chopped in large cubes)
1 c spinach cooked
5 garlic cloves, minced
10 ounces penne pasta (for a gluten-free version, use gluten-free brown-rice penne)
1 pound chicken (chicken breasts or tenderloins)
1/4 tsp red pepper flakes, crushed
1 tsp Italian seasoning (thyme, oregano, basil – combined)
1 1/3 c half and half
1 1/3 c Parmesan cheese, shredded
1/2 c Parmesan cheese, shredded, for serving
1 tsp paprika
2 tbsp olive oil
Directions:
1. Place a large skillet on the stove and turn the heat to medium-high.
2. Add 2 tbsp of olive oil and allow it to become hot.
3. Add the chicken, then cook each side for about 4 minutes or until brown. Season the chicken with salt, Italian seasoning, and paprika. Transfer the chicken onto a clean plate. Slice into small pieces.
4. Add heavy cream into the empty skillet, then allow it to boil. Make sure to scrape the bottom of the skillet to get the browned bits.
5. Add the shredded Parmesan cheese.
6. Turn the heat down to low, then stir until the cheese has melted completely. Simmer for 3 minutes.
7. Add the garlic, chopped tomatoes, red pepper, and fresh spinach. Stir until well mixed.
8. Add 1/3 of the chopped chicken and 1/2 of the bacon. Stir until well mixed. Remove the skillet from the stove.
9. Cook the pasta according to the directions provided on the package. Drain.
10. Add the cooked pasta into the skillet with the sauce, then toss until well coated.
11. Put the skillet back on the stove and turn the heat to low to reheat.
12. Add the rest of the bacon and chicken on top.
13. Serve and enjoy!
