This recipe will always be a part of the list of my favorite recipes! These roasted potatoes never fail to make my day extra special! Try this recipe now and I promise you that you and your loved ones are going to love these fork-tender potatoes. Enjoy!
Ingredients:
3 medium cloves garlic, minced
1/2 tsp (4g) baking soda
4 lbs. (about 2 kg) of russet or Yukon Gold potatoes, peeled and cut into quarters, sixths, or eighths, depending on size
5 tbsp (75ml) extra virgin olive oil, duck fat, goose fat, or beef fat
Kosher salt
Freshly ground black pepper
A small handful of fresh parsley leaves, minced
A small handful of picking fresh rosemary leaves, finely chopped
Directions:
1. Put the oven rack in the center of the oven, then preheat to 450 degrees F.
2. Place a large pot with 2 liters of water, baking soda, and 2 tbsp of kosher salt on the stove and turn the heat to high. Allow the water to boil.
3. Add the potatoes into the boiling water, then cook for 10 minutes or until fork-tender.
4. In a pan, add garlic, black pepper, olive oil, fat, and rosemary. Stir until well blended.
5. Place the pan on the stove and turn the heat to medium. Cook for about 3 minutes.
6. Strain the oil right away into a large mixing bowl. Set aside the garlic and rosemary individually.
7. Drain the potatoes, then put them back into the pot and allow them to sit for half a minute.
8. Add the potatoes into the bowl with the strained oil, then sprinkle salt and pepper to season. Toss until well coated.
9. Put the coated potatoes onto a large baking sheet with a rim and arrange them in a single layer.
10. Place the potatoes inside the preheated oven and bake for about 20 minutes.
11. Turn the potatoes and cook the other sides for another 20 minutes or more until they become crispy.
12. Transfer the baked potatoes into a serving bowl, then add the rosemary and garlic.
13. Sprinkle freshly chopped parsley on top to garnish.
14. Season with additional salt and pepper.
15. Serve hot and enjoy!
