Easy, delicious, and simple! These three words best describe my experience with this Chicken Marsala. The sauce alone is more than enough to let you decide to put this on your list of awesome recipes. Try it now. Enjoy!
Ingredients:
Chicken:
2 tbsp olive oil, divided
4 tbsp unsalted butter, divided
2 large boneless, skinless chicken breasts, halved horizontally to make 4 fillets
1 tsp garlic powder
1/2 tsp black cracked pepper
1/2 c all-purpose flour (plain flour)
1 tsp kosher salt
Marsala Sauce:
3/4 c heavy cream (thickened cream, evaporated milk, or half and half may also be used)
1 1/4 c low-sodium chicken broth (or stock)
4-5 cloves garlic, minced
8 oz. (250g) brown or Cremini mushrooms, sliced
2 tbsp fresh chopped parsley
3/4 c dry Marsala wine
1 tbsp unsalted butter as needed
Directions:
1. In a mixing bowl, add garlic powder, pepper, flour, and salt. Whisk until well mixed.
2. Add the chicken into the bowl with the flour mixture, then toss until well coated. Remove any excess flour.
3. Place a 12-inch skillet on the stove and turn the heat to medium-high.
4. Add 2 tbsp of butter and 1 tbsp of oil, then allow them to become hot.
5. Add the chicken breasts, then cook each side for about 4 minutes or until they turn golden brown. Transfer onto a clean plate and cover them with foil.
6. Add 1 tbsp of butter into the same skillet and allow it to melt.
7. Add the mushrooms, then sauté for about 3 minutes or until brown. Make sure to scrape the bottom of the skillet to get the browned bits.
8. Add garlic, then sauté for a minute or until aromatic.
9. Add broth and Marsala, then stir until well blended. Simmer for 10 minutes or until the volume of the sauce reduces and the texture becomes thick.
10. Add cream and stir until well blended.
11. Put the chicken breasts back into the skillet, then toss until well coated by the delicious sauce. Simmer for about 3 minutes.
12. Remove the skillet from the stove, then sprinkle freshly chopped parsley on top to garnish.
13. Serve right away over rice or pasta. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days.
