With marina sauce as the dipping sauce, enjoy the blended tastes of zucchini, Parmesan cheese, garlic, and many more in these Zucchini Garlic Bites! A must-try recipe!
Ingredients:
1/4 c grated Parmigiano-Reggiano cheese
1 tbsp chopped fresh parsley (or 1/2 tbsp dried)
1 tsp chopped fresh basil (or 1/2 tsp dried)
1 large Egg
1 clove garlic, grated fine
1 c shredded zucchini drained well
1/3 c breadcrumbs
2 tbsp chopped fresh chives (or 1 tbsp dried chives)
1 tsp chopped fresh oregano (or 1/2 tsp dried)
tomato sauce for dipping
A pinch of salt and pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Brush a baking sheet with olive oil.
3. Grate the zucchini with a box grated, then place them onto a clean towel. Cover the zucchini, then wring to remove the water. Grate the garlic as well.
4. In a mixing bowl, add egg, Parmesan cheese, grated garlic, grated zucchini, oregano, salt, pepper, chives, basil, and parsley. Stir until well blended.
5. Use your clean hands to form small balls out of the mixture about 1 tbsp each.
6. Add the balls onto the prepared baking sheet and arrange them in a single layer. Make sure to leave a small space between each ball.
7. Place the baking sheet inside the preheated oven and bake for about 15 to 18 minutes or until they turn golden brown.
8. Remove from the oven and allow the Zucchini Garlic Bites to rest for a few minutes at room temperature.
9. Serve warm with marinara sauce. Enjoy!
Notes:
To Freeze:
1. Allow the Zucchini Garlic Bites to chill for an hour, then transfer them to a freezer bag. Place them inside the freezer. They can last up to 4 months. Reheat in the oven to 400 degrees F.
