I can’t remember how many times I cooked this Creamy Garlic Chicken Pasta {with Tomato & Spinach}! It’s just too perfect and my family loves it, that’s why I always make sure to have all the ingredients ready. It has everything you would hope for in a pasta dish. Give this recipe a try now. Enjoy!
Ingredients:
2 c heavy cream (or 16 ounces)
1/2 c Parmesan cheese, shredded or grated
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1 c tomatoes, diced
10 oz. dry pasta (any kind)
1 lb. boneless, skinless chicken breast
1 tsp paprika
1 tbsp butter
4 cloves garlic, minced
salt & pepper to taste
2 c spinach, chopped, optional
Directions:
1. Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
2. Add the pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process.
3. Sprinkle salt, pepper, garlic powder, paprika, and Italian seasoning over the chicken breasts. Toss until well coated.
4. Place a heavy-duty pan on the stove and turn the heat to medium-high.
5. Add olive oil and allow it to become hot.
6. Add the chicken breasts, then cook for about 5 minutes on each side or until they turn brown. Transfer onto a clean plate.
7. In the empty pan, add butter and allow it to melt.
8. Add the garlic, then sauté for a minute or until aromatic.
9. Add the spinach and tomato, then sauté for 3 minutes or until soft.
10. Turn the down to low, then add Parmesan cheese and heavy cream. Stir until well blended.
11. Season with a bit of salt and pepper.
12. Slice the chicken into small pieces.
13. Add the chicken slices and cooked pasta into the pan, then toss until well coated by the delicious sauce.
14. Serve and enjoy!
