Ingredients:
2-3 tbsp Cajun Spice mix
2-3 Medium ripe tomatoes (about 1 c)
1 c bell pepper
1 large onion, chopped
1 c long grain White rice
1 tablespoon minced garlic
2.5 c chicken stock
2 tbsp butter
250 grams Shrimp Cleaned and deveined
Salt to taste
Lemon Wedges for Serving
Fresh cilantro For Garnishing
avocado for serving
1 tsp cooking oil
Directions:
1. Place a pan on the stove and turn the heat to medium.
2. Add 1 tbsp of butter and allow it to melt.
3. Add the shrimp, then season with 1 tbsp of Cajun seasoning. Cook each side for about 2 minutes. Transfer onto a clean plate.
4. Add oil and the rest of the butter into the same pan.
5. Add the minced garlic and onion slices, then sauté for a few minutes until aromatic and translucent.
6. Add rice, then toast for about 2 minutes over low-medium heat. Make sure to stir from time to time.
7. Add tomato, Cajun seasoning, and chopped bell pepper. Stir until well mixed.
8. Pour in the warm stock, then stir until just mixed. Cover the pan and cook the rice to about 3/4 doneness.
9. Add the shrimp, then stir until just mixed.
10. Cover the pan and cook everything for 8 more minutes.
11. Turn off the heat, then leave it with the cover on for at least 10 minutes.
12. Fluff the rice with a fork.
13. Sprinkle freshly chopped cilantro on top to garnish.
14. Serve with lemon wedges and avocado. Enjoy!
Notes:
Feel free to use fresh tomatoes for this recipe.
You can use your homemade Cajun seasoning.
