Ingredients:
¼ c oil
2 tsp Dijon mustard
2 tsp honey
1 tsp Italian herb seasoning blend – or ¼ tsp each dried basil, thyme, oregano, and parsley or rosemary
juice of ½ lemon
1 ½-2 lb. pork tenderloin
½ tsp salt
2 tsp minced garlic
⅛ tsp cracked black pepper – or a pinch of finely ground black pepper
Directions:
To Marinate the Pork:
1. Use paper towels to pat dry the pork tenderloin.
2. In a mixing bowl, add Dijon mustard, garlic, lemon juice, salt, pepper, honey, oil, and dried herbs. Stir until well blended. Set aside a bit of the sauce for grilling.
3. Add the tenderloins and marinade inside a large resealable bag. Seal and shake the bag.
4. Place the bag inside the fridge to marinate the tenderloin for at least 30 minutes.
To Grill:
1. Prepare the grill and preheat to medium.
2. Brush the grill with oil.
3. Place the pork tenderloins over the grill, then cook all sides for about 15 to 20 minutes. Make sure to flip them from time to time to evenly cook all sides. Also, brush the pork with the reserved marinade a few times.
4. Place the pork tenderloins onto a chopping board and allow them to sit for a few minutes. Slice into even pieces.
5. Serve and enjoy!
